There are 3 passenger train operators in Canada, all very different:
Discover the Rocky Mountaineer for a Classic Rockies Experience

Rocky Mountaineer’s routes travel between lively Rockies resorts and Canadian cities.
Rocky Mountaineer trains are specially designed for sightseeing journeys. They travel only during daylight hours so you won’t miss any of the scenery. Each Rocky Mountaineer train vacation includes two full days onboard the Canadian train and an overnight stop. Rocky Mountaineer offers two main services onboard the trains:

RedLeaf Service
RedLeaf includes an assigned seat next to a picture window and meals are served chilled, right at your seat. One onboard attendant points out areas of interest and provides narration. Non-alcoholic beverages are included, and alcoholic beverages are available for purchase.

GoldLeaf Service
GoldLeaf includes a seat in a panoramic dome car and is the most comfortable and luxurious way to travel the Rockies by rail. Two onboard attendants ensure more personalized service. Gourmet meals – prepared by onboard chefs – are served in a separate dining area. All alcoholic and non-alcoholic beverages are included in GoldLeaf.
Try the Royal Canadian Pacific for a Memorable Journey by Rail
Royal Canadian Pacific trips travel in a circular pattern through the Canadian Rockies. These trips run only on specific departure dates and the exact train route depends on which trip you choose.
This is the utmost in luxury Canadian train travel. Royal Canadian Pacific runs a historical fleet of restored railway cars. Each night is spent onboard the train, with days outside exploring the locale. Gourmet meals - featuring your choice of alcoholic or non-alcoholic beverages - are included, with even more decadent offerings available on Royal Canadian Pacific culinary train tours.
VIA Rail - Discover the East in Style with a VIA Rail Journey

VIA Rail is Canada’s main passenger train network. Overnight train trips in Canada (with the exception of Royal Canadian Pacific trips) are on VIA Rail, as is all eastern Canada train travel.
VIA Rail is not strictly for sightseeing and hosts a mix of locals and tourists. The journey from your departure to arrival point is convenient and comfortable. Onboard attendants are available to address your needs, but do not normally provide commentary.

Silver & Blue Class
Silver and Blue service is included in your package during overnight journeys on VIA Rail. Silver and Blue includes your meals while onboard the train, which are served in a dining car. Common areas are also available so you can interact with your fellow travelers. A domed observation car is available during your journey on a first come, first served basis. Your cabin has a private restroom and washbasin, with shared showers located a few steps from your room.
VIA 1
VIA 1 service can be added as an upgrade to packages including the Corridor train. Access to an exclusive lounge - where you can relax in an armchair and enjoy complimentary soft drinks while you read the day’s papers - is available for your pre-boarding comfort. During the trip, relax in your spacious seat while you enjoy an included meal. VIA 1 service is the best deluxe train in Eastern Canada.

Comfort Class
Comfort Class is the standard service onboard VIA Rail and is included in all packages featuring the Corridor train. You will have a comfortable seat next to a large picture window so you won’t miss any of the scenery.
